I am really not sure if I really got your problem, but to me it seems like you don't really get how flexible the structure of kirby is. As everything you are complaining about is actually possible with that cms. I already worked with Wordpress, Grav, Pagekit and OctoberCMS and almost every feature is possible in that frameworks. The example of work.co is not a question of cms, they just used react for the frontend, for the cms you could even use wordpress or any other api-cms out there...
Damn you was a few minutes faster :D But that is the only modern way i would also recommend.
Some time ago i switched to svg - workflow. Basically you have your artboards with the icons (keep the names clean and semantic!) and export a folder full of svgs. That should be all from your side, the dev team has some options from now on: - create a svg spritesheet (best solution) with a taskrunner and implement with the syntax or (better) create (react)modules - create a css spritesheet with gulpicon/grunticon and work with classes, the same way as with iconfonts All the solutions have enough possible fallbacks, but that shouldn't be your job to manage the right dev workflow.
"Apple is pretty good at supporting older hardware"
In my opinion this only applies to MacOS. Tried to use an iPhone 5 few weeks ago, it was not possible because of the lags. The same case was the iPad 2
Therefore i prefer Grunticon Instead of an iconfont it creates a CSS that can contain svgs with multiple colors and even interactivity. PNG fallback can be also set if needed, a gulp alternative is also available.
haha nice to see own portfolio, even if i was almost never featured anywhere!

I would like to learn Unity/Unreal to be able create better AR Experiences, seems to be a huge field for me with a lot of research...
