I second anything from Treehouse.
I'm a huge evangelist for jumping in and learning through experience. There are plenty of great degree programs out there that I might go back and experience, but I have zero regrets.
This is a great question! My general rule is to split it up and keep it to two typefaces. I do this because I like the split aesthetic; giving the user a greater distinction between titles and content and makes large content pages scannable.
I gravitate towards a sans serif for headings and serifs for body. I used to like sans serifs in the body, but I got to reading some research and changed my tune to serifs in heavy text situations.

Clément, sorry just getting to this.
I found that going to 25 fps really helped in the believability of the gif. Playing around with the dithering and other options when exporting from Photoshop helped a bit, too.
