I don't know how that would work, as the architecture used for the Simulator and the actual device is different so they wouldn't be compatible. I believe you got an .app that was compiled specifically for the Simulator.
Primarily I use Sketch both for wireframes, prototyping (Craft Prototype) and final UI design. For any animation and other prototyping, I switch between Framer, Vanilla CSS/JS, Principle, Swift w/ Pop & Origami depending on the detail and complexity – this helps with iterating and quickly modify parameters.
For more in-depth work, for e.g. icons and illustrations I use Affinity Designer.
At first it was a bit weird, but that's a normal feeling when you've been used to seeing the same font year after year. I have quickly gotten used to it, however I haven't seen how it looks on other systems than macOS.
