What UX Design courses online do you recommend? I feel like most of them are too basic or too expensive. I was hoping to find one which guides you through the whole UX process and maybe helps you build a portfolio project.
What are your recommendations on this?
I just want to take this opportunity to stand on my soapbox and talk about a pet issue of mine. If you look at most (all?) of the resources for getting started in UX, you see a ton of content on how to use various design tools—Sketch and Principle and things like that, and even bizarrely tangential things like React. Rarely do you see content relating to how to actually perform the work of design. This is crazy to me.
Actually being a designer, accomplishing the job of design, has relatively little to do with using Sketch. Yes, you need tools like that to represent the decisions you're making in a concrete way, but that doesn't mean that design is about those tools. That'd be like teaching a course in writing that focuses entirely on how to use a word processor.
To work effectively as a designer, a person needs to know how to empathetically understand things from the standpoint of their user, creatively arrive at solutions, coordinate with stakeholders to chart a mutual path forward, solicit and provide constructive feedback, divide work with other designers, work with developers to figure out how to accomplish their vision, impartially evaluate their own decisions in the face of new data....
Bang on :). This the current scenario where more focus is on learning the tools and less emphasis on the basics.

I can definitely vouch for IDF (Interaction Design Foundation). All their courses are focused on UX, design thinking, strategy and design processes. They have beginners, intermediate and advanced courses.

As you said, it covers the foundations and the core of a discipline instead of the shiny new tools that appear every week.

I also agree that most of the UX Design courses online are too basic or too expensive, and it's hard to find a balance point for specifics like Human-Computer Interaction or User Research.
I think you (and anyone with the same question) should try the Interaction Design Foundation (IDF) online UX design courses. These are taught by experts, and focus on the real science instead of the trending tools.
You'll also get an industry-trusted certificate but more importantly, timeless knowledge.
