Is there a way to open last files on Sketch startup?

Unfortunately, when searching online I wasn't able to find any good results/answers.

Say you have files opened up in Sketch, then you close the app. Then when you reopen it, is there a way to have those files appear without having to reopen them?

Yes. It’s a global macOS setting in System Preferences → General.

Turn this off, to do what you’re after:

Nice, Marc. I had looked for it in settings but wasn't looking in macOS settings =]

One of the things I really enjoy about Sketch being native is that the system prefs panels affect it (keyboard especially).

Amazing -- thank you so much Marc! I would have never thought to have looked into the Mac OS settings :)

Right click the App icon for me brings up last worked on files which may also help :-)

Interesting, when I open Sketch it re-opens what I had open when I quit.

Hmm, I must have missed or overlooked that. Do you think it's in Settings?
