The entire list seems to be made up, with no regard for explaining the ranking. Why are some jobs less stressful than others? Why are some jobs more beneficial to society?

What is the demand like for UX designers though?

I am in the pursuit of a UX job eventually, but with everyone and their dog after UX positions is it a viable career choice?

It's like anything else. If you're good and hungry, then yes there is demand. If you suck at it and don't care to improve/succeed then no.

There's lots of work, particularly if you've got a secondary skill (visual design is a common one, or business analysis is good too). Not all of the work is sexy, but there's a lot of work in finance / enterprise if you enjoy doing detail-oriented work and lots of user-testing.
