Amazing app. I've prompted GitHub to build more Stars features into the site several times, and have suggested it to several developers. I have almost 1000 stars, so when I go looking for something, I have to go through a lot of pages (the search on GitHub isn't very good). This is exactly what I've needed. Thank you, thank you, thank you.
One possible improvement: When you click the "Add to a list" or "Add tags" it will open the respective model. If you then click to create a new list/tag and add one, it will close the modal without assigning the newly created list/tag.
Perhaps a better approach would be if you type in a list/tag that doesn't exist, you have the option of creating and assigning it using the same field.
Its a feature we have on the roadmap for v1.1 we just wanted to ship and make sure people liked it before we put any more side project time into it.
Someone also mentioned this in an issue on GitHub, so I'm sure more have the same feeling.

Looks like a very polished app, congratulations! Love the wallpaper you have in the blog post :)
But what I've always wanted is a desktop app that automatically downloads all your starred GitHub repos and keeps them up to date for you. In other words something like Dash for GitHub.

So something that would hold all of the repos locally, but whenever a commit or a release is done then it would download the latest version and let you know the updates. Sounds pretty easy.
