Yeah the coral background is a bit in your face, I will probably choose a lighter shade. I will definitely lessen the padding for the tags. The tags looking like buttons is a concern, I'm not sure how else to style them since as a list they looked quite overwhelming.

Excellent cover letter. If they don't hire you, it means they're broke!
As for the tags, I suggest a border-radius of half the height so they look more like tags and less like buttons.
Maybe something like that:
I'm not really sure you even need tags for this sort of thing. They don't really add that much that more refined copy in the description of your role would cover.
Failing that, they should probably just be a list anyway as I always think tags are to enable me to click and see related, similarly tagged entries and this doesn't do that.
Also in your intro text, you need to change "an UI/UX design intern" to "a UI/UX".
Really great to see this sort of approach and effort looking for a role you want to make happen :)

Couple of things (no biggies): - You're missing the lang attribute on the html element.
Empty h1. This is one of the most important elements, add text and then visually hide that text with CSS.
Headline structure is off. You're going directly from h2 to h5.
Insufficent contrast on text. This is a great tool: http://snook.ca/technical/colour_contrast/colour.html
There are some small validation errors. Easy to fix.

Looks great! The nav bar is a little crowded on my iPhone when it scales down responsively. Perhaps consider a mobile show/nav with a button? Or play with the layout.
