Procreate's undo feature is great, isn't it? I've often tried to use Adobe's iPad apps after using it and Procreate really spoiled me because of its ease of use while drawing.

Like othershavementioned, can’t the icons just be moved to another desktop and vdeo recording done from Quicktime, Grab, or keyboard shortcuts? I didn’t realize this was a pain point for designers.
AE may be more difficult to learn at first, but once you build your workflow around it, it can become very versatile. You can also use it for more than prototyping.
I've also used Keynote in a pinch for prototyping, and while it's not the most versatile, if you get creative within it's limitations, you can make very convincing mock-ups that can be exported all the way up to an uncompressed 4K video format. I think it all depends on your budget and time constraints.
I agree. I've used Keynote for UI animations and they're just as good as anything I build in After Effects for this purpose. I'd highly recommend it, and I'm surprised it's not used more widely. You can export videos in multiple formats, including 4k at ProRes 422 or 4444 if you desire.
