I would try to get access to the styles file on GitHub (or where ever), branch off and directly change the CSS values yourself, then pull-request it back if they'll let you. (You might need some GitHub push/pull training though, but it's very easy to pick up)
I love the simplicity. I'd pay 8 bucks for this. ( ͡° ͜ʖ ͡°)
I discovered that you can actually make a pie chart in PowerPoint and then drag and drop it into sketch. To my surprise it pasted in as a vector, which is awesome.

I've been curious about the best practice to achieve as well. I feel like Symbols in a Symbol Library placed into each of your projects would be the best solution.
If you used a Symbol Library, you could just select all the Symbols (in your case text), and change the colors there. It's not 1-2 clicks, but it's not bad.
